Here’s a simple recipe for making collagen pancakes. To serve one or two people, you’ll need :
- 100g plain flour
- 1 tsp baking powder
- Pinch of salt
- 1–2 tbsp unflavoured collagen powder
- 1 tbsp sugar, honey or maple syrup
- 1 medium egg
- 150ml milk (dairy or plant-based)
- 1 tsp vanilla extract
- Butter or oil, for frying
How to make collagen pancakes?
First, in a mixing bowl whisk your dry ingredients – the flour, baking powder, salt and collagen powder – together until evenly combined.
Next, into the dry mix add your wet ingredients such as egg, milk, vanilla extract and sweetener. Whisk until the batter is smooth and pourable.
Heat and lightly grease a non-stick frying pan over a medium heat. Then, spoon around two to three tablespoons of batter into the pan for each pancake.
